Job Description

We are seeking a highly skilled and dynamic Beverage Manager/Head Bartender to join our team in Bolero Restaurant, awarded with Michelin Bib Gourmand 2026. This individual will play a crucial role in creating and maintaining exceptional beverage programs across multiple locations, ensuring quality, consistency, and innovation. As the Head Bartender, you will lead a team of bartenders, oversee inventory management, develop new drink recipes, and uphold the highest standards of service and hospitality.

Responsibilities:

  1. Beverage Program Development:
  • Develop and implement innovative beverage menus tailored to each establishment's concept and clientele.
  • Stay updated with industry trends and incorporate new techniques, ingredients, and concepts into beverage offerings.
  • Collaborate with management and chefs to ensure beverage selections complement food menus and overall guest experience.
  1. Staff Training and Management:
  • Recruit, train, and mentor a team of skilled bartenders across multiple locations.
  • Provide ongoing coaching and support to enhance bartending skills, product knowledge, and service standards.
  • Create and maintain a positive and inclusive work environment that fosters teamwork, creativity, and professional growth.
  1. Operations and Inventory Management:
  • Oversee beverage inventory, including ordering, receiving, and maintaining par levels to minimize waste and optimize profitability.
  • Implement effective cost control measures while maintaining quality standards.
  • Ensure compliance with all relevant health and safety regulations regarding alcohol service and storage.
  1. Customer Service and Guest Experience:
  • Lead by example in delivering exceptional customer service and creating memorable guest experiences.
  • Engage with guests to understand preferences, gather feedback, and continuously improve beverage offerings and service.
  • Handle guest inquiries, feedback, and complaints promptly and professionally, striving to resolve issues to the guest's satisfaction.
  1. Quality Assurance and Recipe Development:
  • Conduct regular tastings and evaluations to ensure the quality and consistency of cocktails, wines, beers, and other beverages.
  • Develop and refine recipes, signature cocktails, and beverage presentations to maintain a competitive edge in the market.
  • Work closely with vendors and suppliers to source high-quality ingredients and negotiate favorable pricing.

Qualifications:

  • Proven experience as a Beverage Manager, Head Bartender, or similar role in a high-volume, upscale restaurant or bar environment.
  • Extensive knowledge of spirits, wines, beers, and cocktails, including classic and contemporary recipes.
  • Strong leadership and interpersonal skills with the ability to motivate and inspire a diverse team.
  • Exceptional communication skills, both verbal and written, with the ability to interact effectively with guests, staff, and vendors.
  • Solid understanding of beverage cost control, inventory management, and financial analysis.
  • Certification in responsible alcohol service (e.g., TIPS, ServSafe) preferred.
  • Creative flair and passion for mixology, demonstrated through the development of innovative drink recipes and presentations.
  • Flexibility to work evenings, weekends, and holidays as required by the business.
