Job Summary
We are looking for a skilled and passionate Sushi Chef to join our Fresh Food team. The Sushi Chef will be responsible for preparing a variety of sushi and Japanese food products while ensuring consistent quality, freshness, presentation, food safety, and hygiene standards.
The ideal candidate has hands-on experience in sushi preparation, strong knife skills, attention to detail, and the ability to work efficiently in a fast-paced food production environment.
Key Responsibilities
- Prepare a variety of sushi products including nigiri, maki, uramaki, sashimi, and other Japanese food items.
- Prepare and handle sushi-grade fish, seafood, rice, vegetables, and other ingredients properly.
- Maintain consistent taste, quality, portioning, and presentation of all sushi products.
- Demonstrate excellent knife skills and proper food preparation techniques.
- Ensure proper handling, storage, labeling, and rotation of ingredients.
- Maintain high standards of food safety, sanitation, and personal hygiene.
- Monitor product freshness and quality throughout the preparation and display process.
- Prepare sushi products according to established recipes, standards, and production requirements.
- Ensure products are properly presented, packaged, and displayed.
- Maintain cleanliness and organization of the sushi preparation area and equipment.
- Minimize food waste while maintaining product quality.
- Work closely with the Fresh Food and Operations teams to meet daily production requirements.
- Perform other duties related to food preparation and production as assigned.
Qualifications
- Previous experience as a Sushi Chef, or similar Japanese cuisine position.
- Strong knowledge of sushi preparation and Japanese food techniques.
- Excellent knife-handling and food preparation skills.
- Knowledge of proper seafood and sushi ingredient handling.
- Good understanding of food safety and sanitation standards.
- Strong attention to detail, especially in food presentation.
- Ability to work efficiently in a fast-paced environment.
- Physically fit and able to stand for extended periods.
- Willing to work on weekends, holidays, and shifting schedules as required.
- Culinary training or certification is an advantage.
