Job Description

Job Title: Store Manager / Head Baker

Location: Ortigas

Reports to: Director of R&D

Employment Type: Full-time

Role Summary

Lead day-to-day store operations and oversee baking production. Ensure smooth, profitable store performance, high product quality, excellent customer service, and compliance with safety and hygiene standards. Preferred background in bakery operations; candidates with strong general store-management experience and in-depth baking knowledge are welcome.

Key Responsibilities

- Manage all store operations: opening/closing, cash handling, inventory control, ordering and stock rotation.

- Supervise, train and schedule staff (bakers, front-of-house, cleaners), maintain high team performance and morale.

- Plan, prepare and bake products to consistent quality standards; develop or refine recipes and production schedules.

- Monitor product quality, portion control, waste reduction and yield management.

- Ensure food safety, sanitation and HACCP/health-code compliance.

- Maintain equipment and coordinate minor repairs; liaise with vendors/maintenance for major issues.

- Drive sales and profitability through merchandising, promotions, pricing and upselling.

- Produce operational reports (sales, labor, inventory, waste) and act on trends to improve performance.

- Provide excellent customer service and handle escalated customer issues professionally.

- Long hours including early mornings, weekends and peak periods as required.

Required Qualifications & Experience

- Minimum 5 years experience managing a retail store or food-service outlet, with proven operational leadership.

- Demonstrable, in-depth knowledge of baking techniques, ingredients, production workflow and quality control. Prior bakery experience strongly preferred.

- Bachelor's degree (any 4-year course) or equivalent.

- Strong supervisory, training and staff-development skills.

- Solid financial literacy: budgeting, P&L awareness, cost control and inventory management.

- Excellent organizational, problem-solving and time-management abilities.

- Comfortable working long and flexible hours, including early mornings and weekends.

- Good communication skills and customer-service orientation.

- Food safety certification (or willingness to obtain) preferred.

- Able to prioritize under pressure and maintain composure in a fast-paced environment.

- Team player with a positive, amenable attitude.

Working Conditions & Physical Requirements

- Frequent standing, lifting (up to 25–30 kg occasionally), bending and repetitive motions associated with baking and retail tasks.

- Early start times and weekend shifts required.
