Role Description The Senior Chef is a full-time, on-site role based at Amor Laut Resort in Mabini. This role is responsible for leading the kitchen operations, designing and refining menus that reflect the resort's coastal setting, and ensuring a consistently high standard of taste, presentation, and food safety. Day-to-day responsibilities include supervising kitchen staff, coordinating food preparation and cooking schedules, managing inventory and supplier relationships, and maintaining a clean, efficient working environment. The Senior Chef will collaborate closely with resort management to create personalized dining experiences such as private dinners and special events, adapting menus to guest preferences and dietary requirements. The role also involves training junior team members, controlling food costs, and supporting sustainable sourcing practices aligned with the resort's values.
Qualifications
- Strong culinary skills with proven experience as a Senior Chef or Head Chef in boutique hotels, resorts, or high-end restaurants.
- Menu development and food presentation expertise, including the ability to design seasonal, locally inspired, and guest-focused dishes.
- Comprehensive knowledge of kitchen operations, including food safety standards, hygiene protocols, and compliance with local regulations.
- Team leadership and people management skills, with experience supervising, training, and motivating diverse kitchen staff.
- Inventory management and cost control abilities, including supplier coordination, portion control, and waste reduction.
- Excellent organizational and time-management skills, with the ability to handle multiple orders and special requests in a calm, efficient manner.
- Strong communication and collaboration skills to work effectively with front-of-house and resort management in delivering curated guest experiences.
- Flexibility to work varying shifts, weekends, and holidays, and willingness to be on-site full time in Mabini.
- Formal culinary education or equivalent professional training is preferred; experience with coastal or seafood-focused cuisine is a strong advantage.
