JOB SUMMARY
The Research Development Technical Manager leads product innovation, process standardization, technology transfer, and supplier accreditation initiatives across commissary and restaurant operations. This role ensures products are successfully commercialized through robust process design, accurate product specifications, BOM management, operational standards, and critical control parameters — while maintaining food safety, quality, and cost objectives.
This position serves as the bridge between Product Development, Operations, Supply Chain, Procurement, QA, and Commissary to ensure seamless implementation and scalability of new and existing products.
KEY RESPONSIBILITIES & INTERFACES
A. Product Innovation & Commercialization
- Lead product development and innovation projects from concept to commercial launch.
- Manage product trials, pilot runs, validation activities, and commercialization processes.
- Ensure products meet quality, operational, cost, and customer requirements.
B. Technology Transfer & Standardization
- Lead end-to-end technology transfer from development to commissary and store operations.
- Develop and maintain: Product Specifications, Bills of Materials (BOM), Process Flow Diagrams, Standard Operating Procedures (SOPs), Critical Control Parameters (CCPs) and Work Instructions and Technical Standards
- Ensure successful implementation and sustainability of standardized processes.
C. Process Engineering & Kitchen Flow
- Design and optimize kitchen and production workflows to improve productivity, consistency, and food quality.
- Conduct process mapping, line balancing, and capacity assessments.
- Identify opportunities for operational efficiency and continuous improvement.
D. Supplier Accreditation & Technical Sourcing
- Lead supplier technical evaluation, accreditation, and qualification activities.
- Work closely with Procurement and Supply Chain in sourcing strategy, vendor selection, and raw material validation.
- Conduct supplier audits and technical assessments to ensure compliance with company standards.
E. Operational Governance
- Ensure BOM accuracy and governance within SAP and related systems.
- Conduct root cause analysis and troubleshooting for product and process-related issues.
- Collaborate with Operations, QA, Supply Chain, Procurement, and Commissary to ensure operational readiness and compliance.
JOB QUALIFICATIONS
- *Bachelor's Degree in Food Technology (preferred), Food Science
- Minimum 5 years of managerial experience in Product Development, Process Engineering, Technology Transfer, or Technical Services within the food manufacturing, commissary, QSR, or restaurant industry.
- Proven experience in: Product Innovation and Commercialization, Process Standardization, Technology Transfer, Supplier Accreditation and Qualification, BOM Management and Product Specifications, Critical Control Parameters (CCPs) and Food Safety and Quality Systems
- Strong understanding of kitchen operations, production processes, and workflow optimization.
- Working knowledge of SAP and ERP-based BOM management systems.
- Experience working in large-scale food manufacturing or restaurant organizations or similar companies is highly preferred.
- Strong project management, analytical, problem-solving, and stakeholder management skills.
- Excellent communication and leadership capabilities.
