Job Summary:
The Kitchen Operations Head is a senior leadership role responsible for the overall strategic management, quality assurance, menu development, and operational standards of all expedition kitchens and culinary teams (Kitchen Leads and Helpers). This position ensures all food service aligns with Castaway Tours brand standards, prioritizes food safety and hygiene, and efficiently manages logistics and inventory, including the oversight of the central commissary operation.

Setting the absolute highest standard for food hygiene, safety, preparation, and presentation. This includes excelling in all physical duties (e.g., carrying supplies) and acting as a direct role model for all supervised kitchen staff.

Ensuring timely, accurate, and concise transmission of information to the Tour Guide Leaders, crew, and operations office regarding inventory, meal timing, special dietary needs, and any culinary issues.
Awareness and Responsibility
Taking full ownership of the kitchen's resources, inventory, and cost control. This includes anticipating supply needs, minimizing waste, and ensuring all food handling procedures and health regulations are respected.
Handling Difficult Moments
Maintaining composure and decisive action during high-stress situations, such as adapting meal plans smoothly to unexpected operational changes (e.g., delayed boat transfer, weather), equipment failure, or managing immediate guest food allergies.
Teamwork
Fostering a positive, collaborative, and high-performing environment within the kitchen staff. This involves effective delegation, collaboration with the Tour Guide Leaders on timing, and inspiring unity among the kitchen staff, boat crew, and guides.
1. Culinary Strategy and Quality Assurance
- Menu Development: Design, test, and implement seasonal and sustainable menus that are delicious, logistically feasible for remote preparation, and meet diverse guest needs.
- Quality Control & Auditing: Conduct periodic spot quality checks on departing boats and on-site at basecamps to audit food preparation, storage, and service standards.
- Special Diets: Develop standardized procedures for the safe and accurate management and execution of all special dietary requirements and severe allergies.
2. Operational Logistics and Commissary Management (Awareness and Responsibility)
- Include schedule in the field and in the office, and state specific things to accomplish in each schedule.
- Central Commissary Oversight:Directly manage the operation and logistics of the central commissary,ensuring efficient staging, packaging, and distribution of all ingredients and supplies for multiple tours.
- Inventory and Cost Control: Take full ownership of all kitchen resources and budget. Implement strict inventory management protocols to anticipate needs, minimize waste, and control food costs effectively. (getting the best value)
- Supply Chain: Oversee the sourcing, procurement, and rotation of high-quality ingredients and supplies.
- Hygiene Compliance: Establish and enforce comprehensive standard operating procedures (SOPs) for food handling, sanitation, storage, and waste management that comply with or exceed local health regulations.
3. Leadership and Team Management (Leading by Example & Teamwork)
- Strategic Oversight: Manage and coordinate the schedules, training, and performance of all Kitchen Leads and Kitchen Helpers across multiple operational teams.
- Mentorship: Provide continuous coaching and development to Kitchen Leads, fostering a positive, collaborative, and high-performing culinary environment.
- Conflict Resolution: Assist the Tour Guide Leader in resolving minor conflicts impartially among the kitchen teams. Kitchen incident reports.
4. Communication and Crisis Management (Clear Communication & Handling Difficult Moments)
- Reporting: Ensure timely, accurate, and concise communication and detailed recording and reporting to the Operations Manager regarding inventory, staffing issues, incidents, and budget variances.
- Overall Costing
- Total expense for each tour (Produce per pax comparison)
- Operational Adaptability: Maintain composure and decisive action to adapt meal plans and logistics smoothly in response to unexpected challenges (e.g., equipment failure, boat delays, supplier issues).
- Cross-Team Alignment: Collaborate closely with the Operations Manager and Tour Operator Lead to ensure kitchen logistics align perfectly with boat and basecamp scheduling.
