Location Overview

Join our team in Amanpulo. Blissfully marooned in the Cuyo Archipelago of northern Palawan in the Philippines, Amanpulo lies on Pamalican Island, a private island fringed with white sand beaches and pristine reefs. Role

As Sous Chef, you will play a vital role in assisting the Executive Sous Chef in all aspects of kitchen operations, ensuring the highest standards of food quality, efficiency, and team performance.

Responsibilities

  • Assist the Executive Sous Chef in overseeing all kitchen operations, including food preparation, cooking, and plating.
  • Supervise and manage kitchen team, including training, scheduling, and performance evaluation.
  • Ensure efficient workflow and smooth service during peak hours.
  • Maintain exceptional standards of food quality, consistency, and presentation.
  • Oversee inventory management, including ordering, receiving, and stock rotation.
  • Enforce strict adherence to food safety and hygiene regulations.
  • Contribute to menu development, recipe creation, and specials.
  • Foster a positive and collaborative work environment within the kitchen team.
  • Assist with cost control measures and minimizing food waste.
  • Ensure the proper maintenance and operation of all kitchen equipment.

Qualifications

  • Proven experience as a Sous Chef or a highly skilled Chef de Partie ready for the next step.
  • Strong culinary skills and a deep understanding of Asian and Western cuisines.
  • Excellent leadership, communication, and interpersonal skills.
  • Ability to manage and motivate a diverse kitchen team.
  • Strong organizational and time management abilities.
  • Thorough knowledge of food safety and sanitation practices.
  • Creativity and a passion for culinary excellence.
  • Ability to work effectively under pressure in a fast-paced environment.
  • Culinary degree or relevant certification is a plus.
